Crunchy Salmon Cakes

We used frozen salmon for this recipe mainly because that’s all we can get in Ohio!! Sorry we can also get canned salmon. Which don’t get me wrong I really like using canned salmon in casseroles. So I have to say canned salmon can also be used for this recipe. Be sure to serve this with a nice spicy sauce.

Actually using canned salmon is a great way to mix together this recipe quickly. I mean have you ever had someone pop buy to visit and you want to fix a little appetizer to enjoy while you reconnect. This is one of those great dishes that can be a dinner or an appetizer. And it will totally impress everyone. Well that is if they like salmon!!!

Steps to make these easy crunchy salmon cakes

This is such an easy recipe and take just a few minutes to mix together and toss in the air fryer. First thing is to chop the ingredients. We use a small food processor and everything is ready in a snap. Just cop the salmon, Peppers, Onion, and Parsley. Then place in a mixing bowl.

Add the spices, lemon juice, and lemon zest to the mixing bowl. Mix everything together; salmon, onion, pepper, parsley, spices, and lemon. Form the salmon mixture into small size disk. I use a 1/2 cup measuring cup to ensure all the salmon cakes are the same size.

Lightly spray the bottom of the air fryer with cooking spray. I use either Olive oil or butter spray. Gently cover each salmon cake with the Panko. Place the salmon patties in the air fryer. Spray the top of the salmon with the cooking spray.

n Cook the salmon cakes for 9 minutes in at 400 degree in the air fryer. Flip and spray the salmon with the cooking spray. Then cook for an additional 6 minutes. The salmon cakes should have a nice golden color. Remember all air fryers are a little different so just keep an eye on the salmon. You may need to cook a minute or so longer. Last and best step – Serve and Enjoy!!!!

If the mixture is too moist to form the round cake shape, add more Panko. If too dry add a little more lemon juice.

I use a 1/2 cup measuring cup to measure salmon. This way all the salmon cakes are the same size. Just fill the measuring cup to the top and then shape the salmon mixture in to patties.
